Lesson 9 - Goat Milk, Meat,
And Other Products



Goat Milk


Goat milk is delicious, with a slightly sweet and a little salty undertone. While not that popular in the United States, goat milk is the milk of choice in most of the world. Unlike cow's milk, goat milk need not be homogenized, a process of emulsifying the fat particles in milk in order to give it an even consistency and prevent the cream from separating from the rest of the milk. The fat globules in cow's milk tend to separate to the surface, goat milk's globules, which are much smaller, remain suspended in the solution.

Goat milk is a natural alternative for milk sensitive people. Many years ago, most people routinely drink whole milk but with the growing concern for fat in the diet, many people have switched to low-fat milk or non-fat milk. In addition, a lot of people are opting for lactose-reduced or lactose-free milk. For these people, there is a very good alternative - goat milk. Although goat milk also contains lactose, it is believed that the milk's superior digestibility leaves less undigested residue behind in the colon to ferment and cause the uncomfortable symptoms of lactose intolerance.

Goat milk can be used for drinking, cooking, and baking. Goat milk is used in the production of cheese, butter, ice cream, yogurt, candy, soap and other beauty products. Goat milk is relatively whiter than cow's milk; therefore, butter and cheese made from goat milk are white but are usually colored during processing. Goat milk has smaller fat globules and small curd that is why dairy products made from goat milk are smoother and cream-like.

Goat Meat


Goat meat, called chevon when from an adult and cabrito when from a young animal, is one of the most widely-consumed meats in the world, being a staple in Africa, Asia, and South/Central America. It is considered as a delicacy in European cuisines. Goat meat is very popular part of cuisines in the Middle East, India, Pakistan, Mexico, and the Caribbean.

Goat meat has a strong, gamey flavor, but can become mild depending on how the goat is raised and how the meat is prepared. While goat meat is classified as red meat, it is leaner and has less cholesterol and fat compared with both lamb and beef. Goat meat, therefore, is healthier than lamb and beef. Goat meat requires low-heat, and slow cooking to preserve its tenderness and moisture.

The Market For Goat Meat


About 1.5 million pounds of goat meat is imported from Australia and New Zealand every week and the demand is rising. The demand for chevon or cabrito in the United States cannot be met by local producers, hence the importation.

About 63% of red meat consumed worldwide is goat meat. In the United States, the demand for goat meat comes from ethnic groups such as Middle Eastern, African, Asian, Latin American, and Caribbean. USDA inspected facilities showed more than threefold increase of slaughtered goats from 208,000 goats in 1991 to 647,000 goats in 2003. Imports from Australia increased from 3 million pounds in 1990 to 17 million pounds in 2003.

Fiber


Most people associate prized fibers with sheep without knowing that many expensive yarns, such as the elegant mohair and the sought-after cashmere are from goats.

Mohair


Mohair comes from Angora goats. The Angora goats' fiber, Mohair, must be differentiated from Angora wool or Angora fiber which refers to the downy coat produced by the Angora rabbit. Mohair refers to the silk-like fabric or yarn spun from the hair of the Angora goats.

Cashmere


Cashmere is the softest and most prized fiber for sweaters and suits. It is soft, lightweight, durable, and very warm. Cashmere is considered to be the rarest and most exotic fiber available. Cashmere refers to the soft down undercoat of the Cashmere goats. The fleece of the goat has two distinct fibers - the course outer hair called guard hair, and the fine undercoat, with less than 18.5 micron diameter, which is the source of Cashmere fiber.

Hide


The skin of the goat can be made into different products. Non tanned goatskin can be made into parchment, drumheads, or as sounding boards of some musical instruments.

Tanned leather from goatskin is very durable and is commonly used to make rugs. It is also utilized as carpet binding material. Goatskin leather is popular for gloves, boots, and other products requiring soft hide.

Catgut


Catgut is a tough thin cord made from treated natural fiber found in the walls of animal intestines, usually sheep or goat intestines. They are used for stringing musical instruments and tennis rackets and are used also for surgical ligatures.
